Hojicha is a tea from the late autumn harvest, roasted over high heat, which gives its leaves a brown colour. The infusion is characterised by a deep, brown-honey colour and an intense, warming aroma. Hojicha also has a very characteristic, slightly nutty aroma and flavour, unlike other green teas. That is why it is also popular among people who do not like traditional green tea. Hojicha from Yame consists largely of roasted tea bush stems. It delights with its roasted aroma with noticeable notes of nuts and the crispy crust of fresh bread.

Yamecha is a tea originating from plantations in Hoshino in the Yame region (Fukuoka Prefecture) in the northern part of Kyushu Island, famous for its centuries-old tradition of growing the highest quality teas.

    Properties

Hojicha contains very small amounts of caffeine, so it can be drunk by children and just before bedtime. The catechin contained in this tea has a very positive effect on health – it lowers blood pressure and helps regulate cholesterol and sugar levels in the body. The ingredients found in hojicha tea regulate the body's fat metabolism, making it an excellent addition to a healthy diet. Hojicha is recommended for drinking after eating heavy, fatty foods.

    Teaware

Hojicha is an everyday tea that the Japanese brew in relatively large teapots (approx. 500-700 ml), called dobin (with a bamboo or wooden handle on top of the teapot). Hojicha is usually served in tall cups similar in shape to mugs without handles, called yunomi.

    Brewing method

Put the tea into the teapot – approx. 1 teaspoon per person. Boil the water and after a while pour it over the tea leaves (the optimum water temperature is approx. 90-100ºC). After about 1 minute, pour the tea into the cups. You can brew the same leaves a second and third time, for about 1-2 minutes.
